UNCLE FUNKA FEATURING: THE WAHANA ESTATE NATURAL & THE SMALL FARMERS OF ALTO DEL OBISPO

Unkle funka brings you flat out funk in the cup. Built from 2 different origins, from Indonesia, the Wahana Estate natural and from Colombia, small farmers of Alto Del Obispo, Caturra and Typica.

With THE PROF we so enjoy the whole process of small batch test roasting, cupping and selecting the ones we really like. Its pretty cool creating some top drawer espresso blends for you to use over the counter as a barista coffee partner or to use at home with friends. Either way, play that funky music..rip it..enjoy. DF.

In the cup: Big funky fruitiness. We found… Shaft – Isaac Hayes, Get Up – James Brown, Summer Madness – Kool & The Gang. Funky….hey…What did you find? Tweet us your favourite funk track @extractcoffee for a chance to win a bag of UNKLE FUNKA.

We will be taking UNKLE FUNKA to the UKBC finals in London.

Our good coffee friends in London went all out and put on a fantastic night at Gwilyms’ Prufrock Cafe, raising c£3000 to help rebuild the cafe/roastery and raise “the hearts of SafeHouse Coffee & Tea in Griffin, Georgia USA” following a roastery fire.

John Gordon, the evenings super compere arranged a mighty fine night of coffee, beer, hotdogs, raffles, thumbwrestling & auctions to support the effort to get the Safehouse roastery up and running again.

Custom knock tube

Extract Coffee roaster David Faulkner did us proud by making a custom knock tube that was sold for £135 in a fierce battle between Steve from Has Bean and ‘The Hoff’ to kick off the auction.

The base was a slab of lime wood – planed flat, sanded and finished with epoxy resin. The galvanised tubes, the mounting flange and the clamp all come from a 10kg toper. Complete with old roast residue!

The 45 degree tube that has the knock bar had been shortened with a hand rolled wire edge to make a neat profile.

The knock bar is located with a bar that came off the an old Probat. Also from the old Probat is part of the chimney and brass wing nut along with the leather belt that is around the base, shortened to fit, it was part of the old cooling fan drive belt.

Tamp and Ltd Edition Print

Next Up: Hand made by John Gordon, a 58mm 316 Stainless Steel Flat Base tamp with Brazilian Tulipwood handle. The bonus was a 1st edition limited Gorilla Tampers printed A3 Poster.

Its sale raised £151.50

Kees van der Westen Espresso Machine

The final auction was an espresso machine made by Kees van der Westen.

A 1.300watt 1 group special, manual infusion (separate switches for group valve and pump), progressive pre-infusion, green light connected to element

The machine’s frame is made from an old bike. Cool

It raised £1,650.50

An all inspiring evening. Thanks for having us John (gorillatampers)

For the record David managed to eat 3 Beechwood Smoked BIG APPLE Hotdogs…..

As promised we’ve been cupping our way through a lot of coffee and finally found you three we really like.

Our new arrivals from Bolivia, Brazil and El Salvador are all fantastic examples of the value we place early on in the crop to cup coffee journey. We’re extending you the hand of the quality focussed grower and with our passion as artisan coffee roasters we minimise the footprint to retain natural flavour for you in the cup.

Notes from the Coffee Lab:

BRAZIL – FAZENDA RODOMUNHO

In the cup: This lot has a creamy rounded mouthfeel with a ripe sweetness and medium grape acidity. We found ripe fruit and toffee sweetness. A good clean coffee from a fantastic Brazilian farm.

BOLIVIA – VALENTIN CHOQUEHUANCA – ORGANIC CERTIFIED

In the cup: We found this clean, bright, nutty, macedamia sweetness with some notes of papaya and tropical fruit. This is a good crop to cup coffee and we like it a lot.

EL SALVADOR – FINCA LA REFORMA – 100% RED BOURBON

In the cup: Well balanced, bright grape acidity. Juicy, with floral, lime and exotic fruit notes. I particularly enjoy the brown sugar sweetness. Enjoy. DF.

Visit the roastery shop for details on these farms and more. Oh and please join our mailing list (a little up the page and on the left!) and we will keep you informed of all our news, events and coffees as they arrive in the Extract roastery.

Cheers

David

Named The Prof because of the experimental support it gives to the roastery team in the sampling, selection and espresso blend creation of our green beans. With our custom made approach it also helps us create a profile that can be more easily transferred to our larger roasters.
Called Strong Man for a reason it’s built on a base of Ethiopian Harar and punches through milk for that all round sock in the Jaw! With a name like this you can expect a full bodied, true flat white espresso that sticks and is sure to lift to your Mo!

For 30 days and 30 nights during MOVEMBER the roastery team will be proudly growing their MO’s to help raise awareness for mens’ health and the MOVEMBER FOUNDATION.

A quick count of how much STRONG MAN we’ve sent packing during November and for every kilo that leaves the Roastery doors 50p will be donated to the MOVEMBER FOUNDATION. Or keep an eye out for the STRONG MAN in one of our partner espresso bars, cafes or restaurants.

The Extract team made a pilgrimage to the UK SANREMO HQ on the edge of Dartmoor, Devon to pour some great shots of our Original & Dr Strangelove espresso and to find out just what David and the Sanremo team get up to when they are not setting up for the UK Barista Championships.

We combined a fine Devon lunch with the dismantling of each machine to understand more about what’s under the bonnet as well as put the new on-demand grinders to the test!

As a key partner distributer we recognise Sanremo as a young, dynamic company, setting high standards in the production of espresso coffee machines for professional use. Sanremo’s professional machines are based on designs developed completely within the company by a team of highly skilled professionals. The variety of Sanremo’s professional machines range from models designed for optimal production efficiency, with an excellent value for high level performance, to models with fine contemporary designs to fit beautifully into sophisticated surroundings.

All of their machines enhance the experience of making coffee with a perfect balance of taste, form and function. Supported by Sanremo, we will show you the commitment, passion, focus and attention to detail that they dedicate to all of the baristas and shops that have chosen and will choose Sanremo.

With their new machines due for launch early next year we will keep you posted and up to speed with the latest news from Sanremo.

On Thursday, February 3rd, the SCAE UK 2011 Cup Tasting Championship was won by David Faulkner, Co -Founder and Head Roaster at Extract Coffee Roasters. David then went on to represent the UK in Maastricht, where the World Cup Tasters Championship awards the professional coffee cupper who demonstrates speed, skill, and accuracy in distinguishing the taste differences in specialty coffees.

Coffees of the world have many distinct taste characteristics and in this competition format the objective is for the cupper to discriminate between the different coffees. Three cups are placed in a triangle, with 2 cups being identical coffees and one cup being a different coffee. Using skills of smell, taste, attention and experience, the cupper will identify the odd cup in the triangle as quickly as they can. A total of 8 triangles are placed in each round. The top 8 competitors with the most correct answers and the fastest time proceed to the next Semi-Finals round. Then the top 4 compete again in the Finals round to determine the next World Cup Tasters Champion. Kyriakos Ouzounidis cupped his way to win the Worlds for Greece.

Join our mailing list and we will keep you informed of our new cupping events and coffees as they arrive in the Roastery.
