Barista Skills is a course for people focussing on the key skills required to further a career in the industry. As these modules progress, participants can expect to gain a deeper understanding of the coffee itself and build upon practical skills for milk technique and latte art, not to mention health and safety, customer service and basic business.

Professional Level

OVERVIEW:

This three-day professional course is aimed at those baristas with considerable experience and who have successfully completed the SCA Barista Skills (Intermediate). It is also recommended that participants have completed the SCA Sensory and Brewing courses (Intermediate level).

Written and practical tests: 80% pass mark required.

Successfully completing this course is worth 25 points towards your SCA Coffee Diploma.

COURSE OUTLINE:

This course takes both a scientific and managerial perspective to coffee:

  • Origin, altitude, variety & process
  • Decaffeination
  • Roast influence, freshness & storage
  • Chemical composition (acids, lipids)
  • Grinding – particle analysis
  • Extraction, recipe calculation (i.e. EBF, ratios)
  • Temperature and pressure
  • Refractometry calculations
  • Understanding milk – processing and chemistry
  • Improving latte art
  • Recipe creation for multiple coffees
  • Equipment maintenance (incl. burrs, group seals and filtration systems)
  • Creating an efficient workspace and customer service
  • Cafe cost calculation, accounting and financial management
  • Hygiene, and health and safety legislation and compliance

  • Professional course £700+VAT
  • SCA Professional certificate £144/£218 (SCA Member/non member)
  • 3 days 10am-5pm
  • All full day courses include a light lunch, please inform us in advance of any dietary requirements
