The Sidamo region denotes an area of rich and vibrant biodiversity in southern Ethiopia. Home to a huge spectrum of flavour notes and cup characteristics, including the renowned Yirgacheffe coffees. Sadly, due to the lack of transparency of the Ethiopian Commodity Exchange, very few coffees can be traced back to individual farms, so most lots from the country are named by region.
However, this doesn’t detract from Ethiopian coffees being regarded as some of the finest in the world. This particular lot is both rounded and packed with pungent fruit flavour. The natural process involves allowing a controlled fermentation to take place on the drying coffee, saving on valuable water and giving a unique cup profile. There is a sticky sweetness of candied cherry, floral aromatics and a long finish of red fruit notes. Caramelisation of the coffee in the roasting process coaxes out more of this sweetness and gives balance to the floral and boozey characteristics of this particular processing method.
