This Brazilian Fazenda El Progreso Espresso is processed using the pulped natural method, the most prevalent of the methods in which coffee cherry fruit skin, pulp and mucilage is removed from the seed/beans. Whilst each farm will have variations on this exact process, the pulped natural, or semi-washed method indicates that the majority of the fruit has been removed before drying. Crucially, the mucilage layer is left intact during either sun or mechanical drying. This allows for partial fermentation of the fruit and is renowned for producing full bodied and sweet coffees, with relatively low acidity. We find that this makes for great espresso.
The El Progreso packs a punch in the cup, with a sticky sweet mouthfeel and flavours of plum and floral maple syrup. In milk, these fruit notes mellow to become chewy plum loaf and shortbread biscuit.
