Earlier this year we journeyed out to the Panama coffee harvest and camped out at Finca Santa Teresa to cup their latest processing experimentations. We are now thrilled to be able to offer three coffees comprising this season’s finest crop. These are sweet, floral and delicate coffees – everything you would expect from this growing region. This set comes with a 250g bag of each coffee packed in an Extract Coffee gift box.
Panama is renowned for producing some of the finest, and most expensive, coffee on the planet. The unique characteristics of the region, which benefit from both Atlantic and Pacific weather patterns, black volcanic soils and high altitudes, create coffees unparalleled by any other. The coffee cherries mature slowly and this gives a depth of sweetness and body to the final product. Citrus and floral notes dominate the aroma, and a sharp stone fruit quality is reminiscent of raw cacao.
Finca Santa Teresa is at the forefront of coffee experimentation, particularly in its cultivation of the renowned Geisha varietal, with washed, natural and honey processing all taking place on the estate. The farm’s natural borders of lowland tropical rainforest create unique microclimates for the different lots produced on the farm, and the area is home to some of the most endangered species in Panama, including the famous Resplendent Quetzal and over 600 species of feline inhabit the neighbouring La Amistad National Park, a UNESCO World Heritage Site. Finca Santa Teresa has made its name as a pioneer of some of the world’s finest coffee – placing in the Best of Panama in 8 of the last 10 years!
Lot #15 is processed using the washed method, which involves removing all the cherry skin, pulp and mucilage before drying. It gives the coffee a clean, bright acidity, smooth finish and great balance.
IN THE CUP: Pear, Braeburn Apple & Digestive Biscuit
Lot #35 & #38 are both natural processed coffees we have purchased this season. This method involves leaving some/part of the cherry fruit intact during drying for a controlled fermentation that imparts intense fruit sweetness and boozy flavours.
