The Karimikui Factory collects freshly picked coffee cherry as part of the larger Rungeto Farmers Society which includes around 3,500 smallholders! The reason for this centralisation is to give small coffee farmers access to better processing systems and therefore better-tasting coffees and ultimately higher returns on their crop.
This processing involves submerging the coffee in water tanks and uses flotation channels to separate out ‘mbuni’s (floating fruit) and any other debris. Then the coffee will be fermented in tanks for 24-48 hours. Following the removal of the now loosened fruit pulp, the beans will then ferment further in clean tanks for up to an additional 24 hours. This extra fermentation is very typical of coffee from the region and is thought to give Kenya coffee its pronounced and distinctive acidity.
This coffee also displays vibrant fruit notes and pleasant tea-like tannins for a punchy and dynamic espresso.
