The Zelaya family have been cultivating coffee plantations across Guatemala for over 100 years. They are one of only a handful of farms growing genuine Antiguan coffees. The region is surrounded by the Agua, Acatenango & Fuego volcanoes, and the Santa Clara farm is located on the fertile southern slopes of the former. The family have invested in the building of the farm’s own wet mill, drying patios & green houses in order to improve and streamline processing. The coffee is also shade grown, which protects the coffee trees from direct sunlight, maintains soil health and moisture levels, and provides a thriving habitat for wildlife. In 2010, the Zelaya family founded a scholarship programme to help the children of farm workers into full time education. Following the success of this, and contributions from buyers abroad (of which Extract is one!), the programme is set to extend beyond the farm to children in local communities too.
The washed process includes fermentation times of 14-22 hours. Water is recycled on the farm and all filtered solids used for composting and fertilizer. This process highlights the clean acidity of these coffees. Flavours of green apple, grape and lemon are bright and refreshing on the palette, followed by heavier notes of toffee. A pleasant buttery texture carries these sweeter elements to a finish reminiscent of sugary brandy snaps.
