The decaf argument rages on in the speciality sector, whilst demand increases on an unprecedented scale! Can good quality coffee be preserved through the decaffeination process? We believe that the CO2 process is at the forefront of this debate and that decaf coffee has never been better than it is now.
The Sidamo region of Ethiopia is famed for producing distinctive and exceptional coffees. Fertile highlands stretch south from Lake Awasa in the Rift Valley, and create the optimum coffee growing conditions. Starting with this outstanding product is key to a great decaf coffee.
This coffee is then decaffeinated using the CO2 or Sparkling Water method. Water is used to soak the coffee beans, and the liquid CO2 acts as a solvent to trap the soluble caffeine, which is then removed. The CO2 is recycled, and caffeine sold on elsewhere. Most importantly, the wonderful coffee that is left behind is still complex and delicious, and can be enjoyed by everyone, at any time of day.
