About Finca Capri Semi-Anaerobic Fermentation Filter Coffee

This juicy filter will knock your socks off! This coffee is processed using semi-anaerobic fermentation which gives it an intense sweetness and bright acidity, we taste blackcurrant jelly babies, and mouthwatering tropical fruits.

A pour over method, like chemex or V60 using 70g coffee per 1l water will make this coffee really shine.


Meet the Grower

Finca Capri coffee farm is nestled in the heart of the Colombian Coffee Axis, in Caldes. The farm is a leader in social and environmental welfare, protecting water sources and soil quality on the land and offering employee benefits such as healthcare and pension plans.

This particular coffee includes three varietals: caturra, catimor and geisha; a coffee varietal renowned for producing coffees with complex flavours.

Ripe red coffee cherries picked, sorted, and stored in sealed bags to ferment in semi-anaerobic conditions (without added oxygen) for 72 hours. Then, the coffee is dried for three weeks using sunlight and mechanical dryers to manage humidity and moisture content.

As the skin and flesh of the cherries dry around the coffee beans, they impart complex, fruit flavours into the coffee. In this case, tropical fruits. Finally, the beans are dry milled to remove the parchment and remaining mucilage of the fruit, graded and ready for roasting.


Meet the Roasters

Finca Capri Filter coffee is roasted on Betty, a 1955 cast iron, Probat coffee roaster. We found Betty in  Cardiff in 2010 and lovingly brought her back to life through a series of restorations by Extract Coffee co-founder, David Faulkner. Her most recent restoration throughout 2018 and 2019 made further improvements on her efficiency and will keep this iconic machine running for many more years to come.
