For this year’s Christmas coffee, we wanted to bring you a speciality coffee which dares to be different. This remarkable Geisha coffee from Colombia is exactly that.
Geisha is famously one of the most expensive coffee varietals in the world. Difficult to grow, but with exceptional flavours of jasmine and tropical fruits. These coffees typically score highly when graded – this particular coffee has a cup score of 90 points.
Our Candied Geisha filter coffee is grown by the innovative Diego Samuel in El Tambo, Colombia.
Diego has dedicated his life to experimenting with high-end speciality coffees. By meticulously controlling the variables at each stage of his complex processing methods, he produces unique, exciting coffees which taste like no other.
Ripe coffee cherries are picked, washed and undergo a controlled fermentation. Next, the coffee cherries are pulped to remove their skins and put through a second fermentation, this time, anaerobic which is without oxygen. After fermentation, the coffee goes through a process called thermal shock washing to fix the flavours which developed during the anaerobic fermentation. The final stages are a double washing of the coffee followed by a controlled drying.
The resulting coffee has bright tropical fruit flavours – think tutti frutti sweets and candied papaya. An incredible start to Christmas morning.
We’ve chosen a lighter roast profile for this coffee and suggest drinking it black and brewing as a filter coffee. Our recommended brew recipe is 60g of medium ground coffee per 1l of water.
