A delightful filter that is well-balanced and delicious for a pour-over method such as a Chemex or V60. We taste pomegranate, lime cordial & black tea. We recommend a brew ratio of 60 – 80g coffee / 1000ml.
Kwamangu Factory is part of the Muisuni Farmers Cooperative Society, located in the Machakos County of Kenya, an area with smaller scale coffee production. The first coffee plants in this area are believed to have been introduced in 1958. Kwamangu has around 200 farmers who deliver to it and produces around 220 MT of cherries annually. The cooperative is committed to finding and transitioning to renewable and cleaner sources of energy.
Processing Method
Once the coffee cherries are ready to be harvested, they are handpicked and brought to Kwamangu. The cherries are sorted through by hand to remove cherries that are deemed to be under or overripe and foreign objects are removed. The remaining round red cherries are then taken to the pulping station where they are wet milled to remove the fruit from the seed before being carried down the waterway to the fermentation tanks.
The coffee goes through a wet fermentation process overnight and is moved on from the fermentation tank to the drying stage once the wet mill manager is satisfied that all of the mucilage has been removed from the coffee beans. Here the coffee is under more careful supervision on raised tables. The parchment coffee is covered up whenever there is a sign of rain or the sun’s rays are too harsh until it is taken to the dry mill.
