Traditionally, coffee in Guatemala is processed by smallholder farmers on their own land, but at Ayarza, things are done a little differently. By buying ripe cherries directly from local farmers and processing them centrally, the team can maintain strict quality control and pay a fair premium for great coffee. The result is a cleaner, more consistent cup, one that truly captures the unique character of the region.
Producers like Francisco Nájera have been growing coffee here for over 15 years, overcoming the challenges of plant disease and limited land by focusing on quality and innovation. Francisco also runs a coffee nursery, helping other farmers in the region grow strong, healthy trees.
