Harvested from October through January, these indigenous Ethiopian heirloom varieties mature slowly under shade provided by false banana trees (Enset), a traditional practice that enriches soil health and protects local biodiversity.

After harvest, cherries are purchased locally and brought to Ephtah Coffee’s 3.5-hectare site in Lalesa. Following careful sorting and floating, the cherries are fermented in sealed barrels for 216 hours inside a greenhouse, drying on raised African beds for 12 to 15 days. To manage harvest intensity, Ephtah employs around 15 permanent staff and up to 250 seasonal workers.

Ephtah Coffee builds transparency and ethical sourcing into its model through long-term producer relationships, agronomic training, and price risk management. Through their Ama Commitment initiative, they focus on empowering local female farmers with pre-financing, drying infrastructure, and tailored training, fostering economic independence and safe working environments while preserving Ethiopia’s rich coffee heritage.
