After taking over their family farm 8 years ago, Finca El Diviso is led by brothers Néstor and Adrián Lasso. Now at the reins, they’ve been exploring innovative new practices instead of following their parents' more traditional methods. At just 27 and 25 years old, they’re able to push the boundaries of coffee growing and make their family farm known for its quality and experimentation.
Néstor Lasso is quite the pioneer within the coffee producing industry. Growing up on the farm, he’s learned a lot over the years. Now he’s in charge, through collaboration with researchers and agronomists, he’s been refining his skills. So much so that his farm is now seen as one of the best in Colombian speciality coffee.
Traditionally, this farm has been dedicated to growing varieties such as Caturra and Castillo, which are both extremely popular in Colombia. Néstor and Adrián have been investing in more exotic varietals and dabbling with innovative fermentation processes.
The varietal Pink Bourbon is unique. It’s rare and famous for its floral notes. After hand-picking perfectly ripe coffee cherries, their outer skin is removed and then dry fermented in sealed tanks for 24-48 hours. This part of the process is a little longer than usual, but is an important step to give the coffee those fruitier notes. After fermentation, the beans are washed multiple times and then placed on raised beds to dry for 15-20 days. Finally, the beans are rested before being sorted ready to be exported.
