How to: get silky smooth flat whites

Let's set the scene...

You’ve had the perfect silky smooth flat white at your favourite cafe and you’ve decided to take the plunge and buy yourself a home espresso machine. 3 months have passed and you’ve still not mastered the milk you were hoping for. Instead of being the at-home barista you envisioned, you’re stuck with what you wanted to be a flat white, but it’s more like a cappuccino with extra air (have you just created a new drink??)….

Here’s the thing, it’s not easy. Achieving the ideal silky smooth milk requires a lot of practice - it’s a skill.

But don’t worry we’re here to help.

Josh, our regional trainer in the South West, who also happens to be last year's winner of The Barista League (you have to be s**t hot at latte art for this), shares some of his top tips on how to get silky smooth milk at home.

1. LESS IS MORE

When steaming milk, be mindful and gentle when adding air. Listen out for 3-4 little ‘Tsk’s’ of air. That is all you need for your flat whites.

2. SPIN

Keep the angle of the steam wand to the side of the jug so the milk is constantly creating a whirlpool, this will break down the big bubbles, creating silky smooth microfoam.

3. TAP & SWIRL

After successfully steaming your milk, hold the jug loosely in your hand and give one or two firm taps on a hard surface, swirling until glossy.

4. TILT

Start by pouring from a slight height, then (this bit’s important so listen up) tilt the cup towards you and drop in nice and close to the coffee, halfway between the edge of the cup and the middle. The closer you are the stronger the white of the milk (see images below) will come through, creating that latte art you wish for. If you see no white, you’re probably too far away.

5. PULL THROUGH

If you’ve nailed the step above, at this point you should have the beginning of a white blob forming in the centre of your cup. To finish and create the perfect heart, lift the jug up slightly and then pull through the blob.

6. SLOW DOWN!

We can’t emphasise this enough; slow down! It takes time to master this skill, lots of practice, and a lot of patience. So don’t rush.
