Peaches and Cream Cold Foam
Meet your new go-to summer drink: the Peaches and Cream Cold Foam. We’ve taken our new seasonal Peach Cooler Tea, layered it with fresh peach puree, and topped it all off with a decadent, sweet-and-salty burnt honey cold foam. It’s creamy, crisp, and the perfect sweet treat to cool down with.
Peaches and Cream Cold Foam Recipe
Step 1: Burnt honey syrup
Ingredients:
- 100g honey
- 50g hot water
- Tiny pinch of salt
Method:
- Add the honey to a small pan and heat gently until it bubbles, darkens and smells like toasted honeycomb. You want deep amber, not black or smoky.
- Carefully add the hot water — it will bubble up — then stir until smooth. Add a tiny pinch of salt and leave to cool.
Step 2: Strong peach tea
Ingredients:
- 6g Extract Peach Cooler Tea
- 200g hot water
- 100g ice
Method:
- Brew the tea hot with 200g water, then add 100g ice straight after brewing to chill and dilute. Keep chilled until ready to use.
Step 3: Peach purée
Ingredients:
- ½ ripe peach
- 10g simple syrup (Equal parts sugar and water, dissolved together)
Method:
- Blitz the peach with the simple syrup until smooth.
Step 4: Burnt honey cream top
Ingredients:
- 50g double cream
- 25g whole milk
- 18g burnt honey syrup
- Tiny pinch of salt
Method:
- Whisk, froth or shake until thickened but still pourable. It should sit on top of the drink like a soft cream cap, not stiff whipped cream.
Step 5: Assemble
Fill a glass with ice.
Add and stir well:
- 30–40g peach purée
- 130–150g chilled Extract Peach Cooler Tea
Top with:
- 40–50g burnt honey cream
- Finish with a little lemon zest, a thin peach slice, or a tiny pinch of flaky salt.
The drink should taste like bright peach iced tea underneath, with a soft salted burnt honey cream on top.
