After taking over their family farm 8 years ago, Finca El Diviso is led by brothers Néstor and Adrián Lasso. Now at the reins, they’ve been exploring innovative new practices instead of following their parents' more traditional methods. At just 27 and 25 years old, they’re able to push the boundaries of coffee growing and make their family farm known for its quality and experimentation.

Traditionally, Finca El Diviso has been dedicated to growing varieties such as Caturra and Castillo, which are both extremely popular in Colombia. Néstor and Adrián have been investing in more exotic varietals and dabbling with innovative fermentation processes.

After hand-picking perfectly ripe coffee cherries, they’re placed in oxidation tanks for 48 hours to intensify flavours. Next, they’re rinsed to loosen the mucilage and then fermented with yeast for 38-48 hours, an important step to pushing the flavours even more. Lastly, the cherries need to dry, so they are stored for 2 days and then placed under cover on drying beds for approximately 15 days. Whilst this process may sound longer and more complicated than you’d expect, every part is crucial to bringing out the zingy, jammy flavours you’ll taste!

What exactly is Ombligon?

‘Ombligon’ translates from Spanish to English as ‘belly button’, coming from the unique shape of the beans. It is believed that Ombligon is related to an Ethiopian heirloom varietal caused by natural mutation, but the exact origins are unknown. Currently, it is only grown in Huila, Colombia, making it particularly rare.

Ombligon coffee has gained popularity in international coffee competitions in recent years. This coffee is highly favoured for its unique flavour profile and layers of complexity, which this incredible coffee has in abundance!
