Overlooking the picturesque Coatepeque Lake, one of El Salvador's largest lakes, the farm takes up approximately 60 hectares, 40 of which are for coffee plants and the other 20 are reserved for natural forests. Within these 20 hectares, they grow dense forests, allowing for their coffee to be shade-grown, making them unique amongst their competitors in the region. Shade-grown coffees grow more slowly, allowing the beans to develop richer, more complex flavours.
Growing coffee so close to the crater of the Ilamatepec Volcano comes with its perks. The land is rich in volcanic soils, contributing to the unique flavour profiles found in the coffee produced in this area. If you’ve not heard of honey processing before, it’s a hybrid between the washed and natural processing methods. Once the cherries have been picked from the plant, the outer cherries are removed, leaving the sticky and sugary mucilage on the bean for drying. This results in an intense sweetness and a smooth mouth feel.
