What is a Speciality Coffee Association (SCA) Diploma?
The Speciality Coffee Association's Coffee Diploma System is the most up to date and respected training programme available. It is written by a team of coffee and education professionals, is reviewed and updated as equipment and knowledge within the industry improve.
With three levels over five disciplines, it means that you enter your staff at a level that's right for them, but they continue to learn beyond their current area of expertise. It allows students to work their way to achieving a coveted SCA Diploma.

SCA BARISTA SKILLS: FOUNDATION

Barista Skills covers everything espresso. Expect to gain a deeper understanding of the coffee itself and practical skills, including milk steaming techniques, creating a barista menu, health and safety, customer service and machine cleaning and maintenance.
SCA BARISTA SKILLS: INTERMEDIATE

- Level: Senior Barista

SCA Intermediate Barista Skills builds on the practical skills covered at the Foundation level, including machine maintenance, basic business accounting, preparing multiple drinks during a busy service and milk techniques and latte art.
SCA BARISTA SKILLS: Professional

- Length: Three day course
- Level: Head of Coffee

The Barista Skills Professional certificate has four practical tests and a written exam. The course takes a more scientific approach to coffee, understanding extraction percentages and how roasting affects the potential flavours of coffee. It's taught from a managerial perspective, so it's ideal if you're working towards or in a Head of Coffee role.

The study of brewing introduces you to the different ways of brewing coffee, from Chemex to Clever Dripper and French press.
In the SCA Foundation Brewing Skills course, students will learn the basics of different brewing methods and the impact these have on the flavour of coffee.

The SCA Intermediate Brewing Skills course looks more closely at the extraction of coffee in different brew methods and how this impacts flavour.
This intermediate course allows you to get hands-on. Learn to analyse your grind profile, match your grind to your brewing method, scientifically measure coffee strength and chart coffee extraction.

SCA Professional Brewing Skills is an advanced module in brewing coffee.
The course looks in detail at the science and processes behind the various brewing methods to bring the best out of coffee.
It consists of a written and practical test and is worth 25 points towards a SCA Coffee Diploma.

In the SCA Foundation Sensory Skills course, you will explore the differences between speciality vs non-speciality coffee as well as being taught the concepts of sensory anaylsis and its importance in the coffee industry.
Students will start to identify and describe aroma, taste and body in coffee and you'll be introduced to the SCA cupping protocol for coffee tasting.

In the SCA Sensory Skills Intermediate course, students will learn how to apply sensory science to analyse aroma, taste, and body differences in coffee.
You'll also learn different ways of testing coffee and will progress in the calibration of the SCA cupping form. As part of this barista course, you will examine basic requirements for developing a sensory program at your place of work.

In the SCA Professional Sensory Skills course you'll be taught industry-wide sensory standards for coffee and learn how to run a sensory evaluation within a coffee business.
You'll learn how to evaluating specialty green coffee and to accurately measure and describe the characteristics of coffee drinks.
