Coffee production plays a crucial role in Peru’s economy, taking up a third of its agricultural employment. Across Peru, there are 375,000 hectares dedicated to producing exceptional coffee. Remarkably, over 90,000 of this is organic, highlighting the country's sustainability efforts.
Callayuc and the surrounding areas are known for warm days, cool nights and significant rainfall. This enables Demetrio and his experienced team to grow and process high-quality beans. Once his team has handpicked the best cherries, they’re sorted, washed and sun-dried for 15 days.
Bourbon coffees have a reputation for excellent cup quality along with having complex and sweet profiles, with and without milk. Growing this varietal comes with its challenges for farmers as it requires close attention to keep the plants healthy.
Since 2013, Demetrio and his wife have personally cultivated and cared for El Cerro farm. It’s through their dedication and obsession over the land they’ve been able to support their young family financially.
