Our Passion Fruit Low Caff (60% decaf / 40% fruit ferment) has been a big talking point since its huge success at Manchester Coffee Festival back in November. It’s the first coffee we’ve roasted with a fruit ferment and it’s caused quite a stir.
This innovative low-caffeine fruit ferment filter coffee hits you in the face with tropical flavour, a delicious Colombian sipper that won’t get your ticker racing.
It’s bright, fruity, and packs a punch of flavour without overwhelming you with caffeine. Pre-launch feedback from the festival was phenomenal, “Never tasted anything like this before, it’s exceptional”. It gets rather fruity in the ferment tank
40% of this blend is a rather experimental one. Starting with a honey process, the coffee is then exposed to a dry anaerobic (no oxygen involved) fermentation for 72 hours. At this point, passion fruit pulp (the juicy bit in the middle) and wine yeast are added.
We then take it to the next level, blending it with 60% Sugarcane Colombian decaf which offers a perfect base of body and sweetness, marrying perfectly with the funky fruit ferment.
Our Head Roaster, Tommy, says “We wanted to find something super fruit-forward and fun to pair with a decaf to bring a low caf filter to life. We tried a range of wacky co-ferments and I think the passion fruit translates really well in the cup. Blended with decaf, it brings enough juicy tropical notes but with less of the caffeine buzz.”

Did you know that the ethyl acetate (EA) used to decaffeinate coffee is derived from processes like fermenting fruits? It is highly temperature-sensitive, meaning that any residual EA in the coffee is eliminated during roasting once the temperature exceeds 70°C. Therefore, when you drink decaffeinated coffee, you are not ingesting any EA. In fact, ripe bananas contain ten times more EA than decaf coffee!
