With their farm surrounded by some of the highest peaks in the state, Valdeir Cezati and his family have spent nearly 20 years producing incredible speciality coffee. This delicious natural espresso is no exception, giving us flavours of banana bread & frozen yoghurt when enjoyed with milk - delicious!

A little more about the Valdeir

Valdeir is the fifth generation within his family to work on his land, including over 15,000 Arabica trees. His ancestors came to Espírito Santo in the 19th century and have worked on the farm ever since, it’s steeped in a rich history. Over the last few years he’s been adapting his families traditions by focusing on developing more environmentally friendly ways of operating.

Alongside exploring ways of being more environmentally friendly as a coffee farm, Valdeir has also recently changed his variety to Red Catuai. Originating in Brazil, this variety allows for high-yielding growth at altitudes of around 1,000-1,300 metres. In making this change, their coffee began winning local competitions.

What is a natural coffee?

Coffee processing is a crucial part of the production process, which can have a dramatic effect on the flavour of the end product. You may or may not have heard of natural processing before. This is what gives coffee its fruitiness and sometimes boozy flavours. Once ripe cherries are picked and sorted, they’re left to dry in the sun, allowing the cherries to ferment around the coffee bean.

This particular espresso is a ‘pulped natural’. This simply means that just the outer skin of the cherry is removed, but the inside of the fruit remains intact during the drying process.

What makes Brazil so great for coffee production?

Brazil, famously known as the undisputed leader in coffee production, gives coffee its ideal climate to thrive, thanks to its amount of rainfall and sunlight, plus even year-round temperatures.

Aside from its climate, Brazil has incredibly fertile soil, which is an important factor when it comes to growing coffee. It’s known to be rich, high in nutrients and offers trees reliable drainage.
