Finca Camelia was the first plot that the Echaverria family purchased and now makes up one part of the larger Santa Barbara Estate. Great coffee knowledge, together with an embrace of technological advancements, have given the Estate a reputation in the region that is second to none.
This particular lot is processed from two days of harvest. The first fermented for 24 hours, before the second days pick is introduced for a further 24. This stabilises the pH levels, yet allows ripe fruit flavour to develop. It is this controlled ferment that has become distinctive of the coffees from this estate.
Santa Barbara houses the majority of its full-time workers on site, as well as providing scholarship programs and financial aid for their children. Workers are also incentivised to acquire their own plot of land upon retirement. As well as this, Santa Barbara workers (including seasonal pickers) can expect to be paid around 30% more than the local minimum wage.
It is a pleasure to be working, once again, with a farm that is wholly invested, not only in the campaign towards better coffee but to bettering the quality of life for farm workers too.
With rich, chocolatey flavours and that cranberry fruit note, this makes for a delicious espresso – enjoyed straight up as a double shot or with milk.
