The Mugaya Co-operative receives ripe coffee cherry from around 1600 smallholders in the region. Each farmer cultivates an average of just 180 trees. The Factory (or mill) uses a disc pulper to separate the coffee cherry skin and fruit pulp from the seed. The seeds are then fermented overnight before being dried on raised beds. This can take up to 15 days dependant on temperature, humidity and volume of coffee. It is during this drying process that the majority of the hand sorting and turning takes place.
The Coffee Management Services (CMS) is providing these smallholders with additional training and tools to assist in the improvement of sustainable farming in the region. This, together with the higher returns these farmers can earn, is driving coffee quality and environmentally conscious practices forward.
This lot is graded AA, meaning a larger screen size, and good visible consistency. Whilst not a guarantee of great coffee in itself, this consistency allows for uniform roasting, and therefore an even development of flavour.
