"I couldn’t wait to try Finca Buenavista when I saw it. Unusual, exciting and all-out delicious.
With this coffee I wanted to push the boundaries of our usual style by really putting my stamp on it to create something exceptional.
By controlling the caramelisation and roast aroma, we've produced a coffee with bright, tropical acidity and clarity.
I wanted to show off Finca Buenavista's 36 hour fermentation processing method using their innovative Ecomill, whilst retaining the characteristics of Colombian coffees: complex fruit driven acidity, sweetness and chocolatey aromas, with and without milk. I'm proud to say that I think we've nailed it. This one's a showstopper”

What is Ecomill coffee processing?
Whilst this is a washed coffee, the processing method uses innovative technology known as an ‘Ecomill'.
Designed to be a sustainable, all in one processing unit, Ecomill coffee processing uses 90% less water than a traditional washing station and consistently produces delicious tasting coffee of incredible quality.
The Ecomill first depulps the coffee cherries and then pushes them through to a controlled fermentation tank for up to 36 hours.
This controlled fermentation gives the coffee its mouthwatering tropical fruit flavours.
Once fermented, the cherries are washed and sorted by internal sieves and dried in a controlled environment, using a dehumidifier which can reduce the moisture to around 20% in a few hours, compared to days using traditional sun drying.
Controlling the drying process in this way means Carlos and his team can control the levels of fermentation in the coffee, and the final flavours in the cup.

Carlos Gallego himself comes from a family of coffee pioneers. With an innovative lens, each step in the coffee production process has been scientifically analysed to make it more effective.
