About Aquiares Estate

High on the fertile slopes of Turrialba Volcano is one of Costa Rica's largest and most historic coffee farms, Aquiares Estate.

Aquiares has a reputation for producing exceptional coffees, like this natural-processed filter.

With playful tropical sweetness and subtle boozy notes, this is one coffee we’re really excited about.

Aquiares was among the first estates to produce and export Costa Rican coffee. The Robelo family took over in 1971, committing themselves to a modern, sustainable approach to coffee farming.

The estate manages its entire coffee production, from seedling cultivation to harvesting and milling. This coffee is a micro-lot of the Centroamericano varietal, known for its incredible cup quality and tropical flavours.

The natural process brings out the complex flavours of this coffee. Coffee cherries are skillfully hand-picked before undergoing a detailed drying process. The coffee is sorted in flotation tanks, pre-dried in a solar dryer greenhouse and dried on raised beds. Finally, the coffee is sent to us for roasting.


Why we love this coffee

The Aquiares Estate leads in environmental sustainability, connecting the environment, social responsibility and coffee quality.

Aquiares sets an example by producing high-quality Arabica coffee whilst preserving its natural surroundings, supporting a local community of 1,800 people and prioritising worker wellbeing.

The estate protects water sources and natural forests, creating natural corridors connecting preserved forests in the river valleys. Tree planting and reduced chemical fertiliser usage have resulted in a net carbon-negative balance.


How to brew Aquiares Filter

For a clean and bright coffee like this filter, we like to use a pour-over method like a V60 where those delicate flavours can shine.

We recommend 15g of medium-ground coffee and 270ml of filtered water, poured with precision (using a coffee kettle if you can) and aiming for a 3-3.30 minute extraction.


Meet the roaster

Aquiares Filter was roasted by our Head Roaster, Tommy on Betty, a 1955 Probat drum roaster, lovingly modernised and rebuilt by the team at Extract Coffee Roasters. This coffee went down an absolute storm when we served it at Manchester Coffee Festival and we're stoked to be roasting and drinking it once again.
