SUMMER DRINKS IDEAS FOR 2022
Your summer drinks should be bright and enticing; driving sales during the warmer months where customers buy fewer hot drinks.
This year we’ve brought back some classic iced coffees and iced teas and added some new, innovative drinks for you to try too.
The drinks created by the Extract team are designed to be quick and easy to make during a busy service. From iced coffee favourites like iced lattes and iced mochas, to refreshing iced teas and delicious summer coolers, we’ve got you covered.
We have vegan options with frappes, designed to be made with plant based milks, eye-catching pure plant powders like beetroot and matcha, and tasty syrups like rose and cherry for the ultimate summer vibes.

ICED LATTE
- 200ml fresh cold milk
- 1 shot double espresso
- Ice
Add milk to ice. Top with espresso.
Made using semi-skinned milk. Estimated calorie count: 100kcal
CARAMEL ICED LATTE
- 200ml fresh cold milk
- 1 shot double espresso
- 2 pumps Sweetbird Caramel syrup
- Ice
Add milk to ice. Mix espresso and syrup together then pour over iced milk. For a sugar-free option, try the Sweetbird Sugar-free Caramel syrup.
Made using semi-skinned milk. Estimated calorie count: 158kcal
DARK CHOCOLATE ICED MOCHA &
WHITE CHOCOLATE ICED MOCHA
- 200ml fresh cold milk
- 1 shot double espresso
- 1 scoop Extract Dark Hot Chocolate or Extract White Hot Chocolate
- Ice
Add milk to ice. Dissolve Extract Dark or White Hot Chocolate in the hot espresso and pour over iced milk.
Made using semi-skinned milk. Estimated calorie count: 229kcal dark choc, 243kcal white choc

We recommend making batch-brews of these recipes and storing them in the fridge to save time during a busy service.
LEMONGRASS & GINGER COOLER (VG)
- 1 Extract Tea Lemongrass & Ginger Tea Bag brewed in 100ml water (brewed hot then cooled)
- 1 pump Sweetbird Rose syrup
- 1/4 lemon juice
- Soda water
- Ice
Pour soda water over ice and top with brewed tea, add a pump of syrup, squeeze quarter of a lemon and stir.

BERRY ICED TEA (VG)
- 1 Extract Tea Berry Tea Bag brewed in 100ml water (brewed hot then cooled)
- 1 pump Sweetbird Lemonade syrup
- Sprigs of mint to garnish
- Ice
Pour tea over ice, add syrup then stir and garnish with mint sprigs.

MATCHA FIZZ (VG)
- 1 scoop Zuma Organic Matcha powder
- 1 pump Sweetbird Vanilla syrup
- 1/4 lemon juice
- Soda water
- Ice
Make a paste with matcha powder, vanilla syrup and hot water. Pour the soda over ice followed by your paste then squeeze in quarter of a lemon and stir.

MATCHA WHITE CHOCOLATE
- 1 scoop Zuma Organic Matcha powder
- 1 scoop Extract White Hot Chocolate powder
- Milk
- Ice
HOT: Make a paste with white hot chocolate powder, matcha and hot water, pour in steamed milk of choice.
COLD: Pour milk of choice over ice, make a
paste with white chocolate powder, matcha and hot water, pour over milk and stir.
Save time by pre mixing a batch of Matcha Chocolate and storing in the fridge. Do not store on counter top during service.

ICED FRAPPE RECIPES (VEGAN FRIENDLY)

We recommend using a blender to make Frappes properly. We like the Blend-tec blenders but any blender or smoothie maker will work for this recipe.
CLASSIC FRAPPE (VG)
- 1 shot double espresso
- 150ml oat milk
- 1 scoop Sweetbird Vanilla Frappe powder
- Ice
Blitz everything together using a blender and garnish. We've used a drizzle of chocolate syrup, a vegan biscuit, sprinkles and whipped cream. You can be creative with dairy or vegan whipped cream.

CHERRY SUNDAE FRAPPE (VG)
- 2 pumps Sweetbird Cherry syrup (3 pumps if using Oat milk)
- 1 scoop Sweetbird Vanilla Frappe powder
- 1 scoop Zuma Beetroot powder
- 150ml milk (oat or dairy)
- Ice
Blitz everything together using a blender and garnish with a fresh cherry or a drizzle of cherry syrup.

TURKISH DELIGHT HOT CHOCOLATE /
TURKISH DELIGHT CHOCOLATE ICE
- 1 scoop Extract Dark Hot Chocolate powder
- 1 pump Sweetbird Rose syrup
- Milk (dairy or oat)
- Ice
COLD: Make a paste with hot chocolate powder, rose syrup and hot water, pour milk of choice over ice and follow with paste, and stir.
HOT: Make a paste with hot chocolate powder, rose syrup and hot water, steam dairy or alternative milk and pour.
Estimated calorie count: 237kcal. Made using semi skimmed milk.
PINK LEMONADE
- 2 pumps Sweetbird Lemonade syrup
- 1 pump Sweetbird Rose syrup
- 1/4 lemon juice
- Soda water
- Ice
Pour soda water over ice, add lemonade and rose syrups squeeze quarter of a lemon and stir.
