This incredible thermal shock filter coffee, with a flavour profile straight out of The Nutcracker’s Land of Sweets, does exactly that. This is a high-end coffee and we want it to be at its best when you drink it. For this reason, it is available as whole bean only. We’ve chosen a lighter roast profile for this coffee and suggest drinking it black and brewing as a filter coffee. Our recommended brew recipe is 60g of medium ground coffee per 1l of water.
Coming to us from the Villa Esperanza – Paraiso, owned by speciality coffee pioneer, Diego Samuel in El Tambo, Colombia. Diego has dedicated his life to experimenting with high-end speciality coffees – and the results are mind-blowing. Diego and his family meticulously control each variable during the coffees’ overwhelmingly intricate processing. The coffees they produce have vibrant flavours which taste like no other.
Ripe coffee cherries are picked, washed and undergo a controlled fermentation. The coffee cherries are then pulped to remove their skins and put through a second anaerobic fermentation, which is without oxygen. Next coffee goes through thermal shock processing, a pioneering method to bind the flavours developed during the second fermentation. The final stages are a double washing of the coffee followed by a controlled drying.
This amazing coffee tastes like something straight out of The Land of Sweets itself. The sticky-sweetness of ripe plums and berry jam and floral notes of lavender. A delicious way to end the year.
