Villa Betulia, owned by Luis Anibal Calderon is famed for producing standout exotic lots.
In 2015, Luis embarked on the mission to dedicate the entire farm to growing exotic coffee varieties. Fast-forward to today, Villa Betulia is renowned for producing incredible speciality coffees and Luis is considered a master at processing natural coffees like - this juicy filter!
After carefully harvesting the ripest cherries by hand and sorting to remove any defects, the cherries dry in the sun on raised beds in temperature-controlled conditions. As the coffee dries, the sugars in the cherry ferment allowing intense sweetness and complex flavour to develop in the coffee, in this case, syrupy notes of tropical fruit salad and a subtle hint of lime cordial on the finish.
Why we love it
‘Ombligon’ translates from Spanish to English as ‘belly button’, coming from the unique shape of the beans. It is believed that Ombligon is related to an Ethiopian heirloom varietal caused by natural mutation but the exact origins are unknown. Currently, it is only grown in Huila, Colombia making it particularly rare.
Ombligon coffee has gained popularity in international coffee competitions in recent years, and one of the finalists in the 2023 World Barista Championships even used it. This coffee is highly favoured for its unique flavour profile and layers of complexity - which this incredible coffee has in abundance!
How to brew
enjoyed black and our go-to brew method is the Hario V60.
Weigh 30g of medium-ground coffee for 500ml water and rinse your filter paper with hot water.
Add coffee to the filter and pour 100ml hot, filtered water over the coffee, soaking all the grounds, allow to bloom for 30 seconds.
Pour the remaining 400ml water over the coffee bed in a controlled, circular motion (ideally using a coffee kettle), aiming for a total brew time of 4 minutes.
