More about El Indio, Colombia

The Tolima region is one of Colombia’s most renowned coffee-growing regions, with the coffees being well represented in Cup of Excellence and Colombian Coffee Federation competitions.

This particular coffee is the combined effort of a group of growers in the El Indio programme. The programme works with the farmers to maintain strict standards and protocols in how the coffee is processed, keeping quality consistently high.

Once the coffee cherries are harvested, they are placed on raised beds or concrete patios to dry until the ideal moisture level is achieved - this stage is crucial to get the high cup quality at the end.

As the coffee dries, natural fermentation breaks down the sugars in the cherries, resulting in unique and interesting flavours, in this case, passion fruit jam and grape soda black, softening to tarte tatin in milk.

How to brew El Indio Colombia

We are amazed by how this coffee transforms in milk.

When brewing as an espresso we recommend 18g finely ground coffee for 36ml espresso and a shot time of 25-28 seconds. Add milk to soften those tropical fruit flavours to notes of tarte-tatin and vanilla sweetness.
