Nestled high on the Mexican & Guatemalan border, right on Chiapas, Mexico’s famed ‘Ruta de Cafe’, Finca Guadalupe Zaju is where the magic happens.

This area is known for producing some of Mexico’s finest coffee, and this shade-grown washed filter is no exception.

With nutty notes and delicate peach flavours, this is an filter we’re super excited to spotlight, a perfect example of how Mexican coffee is flourishing.


About Guadalupe Zaju

Representing around 2% of global coffee production, Mexico has a coffee legacy dating back to the 18th century.

In 2003 Finca Guadelupe Zaju was forced to be sold after coffee prices hit rock bottom. Teddy Esteve stepped in to purchase Finca Guadelupe Zaju and some of its neighbouring farms.
With a keen focus on sustainability and environmental impact reduction, Teddy and his expert team have turned Guadelupe Zaju into a shining example of sustainable speciality coffee production.

The coffee is handpicked and sorted, then delivered to the mill for processing. At the mill, the coffee is de-pulped to remove the skins of the cherries, sorted by density and fermented in tanks for 15-40 hours (depending on weather and temperature).

Inconsistent hours of sunshine means the coffee is dried using guardiolas (mechanical steel drums) rather than on patios before it is rested, bagged and sent to us for roasting.

The team at Guadelupe Zaju takes each step of coffee production seriously, caring for the environment as they go.

The coffee is 100% shade-grown and the farm is Rainforest Alliance certified. Water conservation is a priority here and the mill closely monitors water-usage.

We love Teddy Esteve’s dedication to producing the absolute best coffee in his region. To him, this is more than just a coffee but a passion project that’s not to be missed.


How to brew Guadelupe Zaju Filter

If brewing by hand, try as a V60 to highlight those soft peachy notes. 15g coffee to 250ml water in 3:30 minutes.

In a batch brewer try 60ml medium-ground coffee per litre.

Guadelupe Zaju Filter is roasted by our Head Roaster, Tommy, on Betty, a 1955 Probat drum roaster which has been modernised and lovingly rebuilt by the team at Extract Coffee Roasters.
